I'm not the one to ask for recipes - but, my husband makes this thing with zucchini - he puts them in a skillet with peppers, onions and canned tomatoes - cook down and makes like a stew - it's good. You could add corn and yellow squash - anything. Also, my cousins make zucchini bread, but I have no recipe for you - sorry.
